I’m using Process API, requesting data about a polygon,
Is it possible to receive a response as a URL to S3 and not a picture?

Please check CatalogAPI if you are just trying to list available data over given polygon. The response (for Sentinel-2, at least), will also include assets and data items, which contain links to s3.
