It seems to me you have somehow missed the whole point of eo-learn and sentinel-hub. I’d advise you to go through the documentation and examples (plenty of them on corresponding readthedocs pages) thoroughly.

Yes, it is possible to request composites (e.g. various indices, etc, see also https://custom-scripts.sentinel-hub.com for some very elaborate composites), and yes, the whole point of EOPatch is that one can save them and operate on them at later stage.
